Green smoothies continue to be all the rage in the realm of healthy food trends. There’s something about drinking your greens in a tasty, cleansing smoothie that makes those vegetables much more appetizing.

In my town, we’ve been experiencing a bit of a heat wave this week. Because I had frozen bananas stocked up in the fridge (confession: I quite frequently eat them straight out of the freezer like popsicles), it was even simpler to whip up this cooling smoothie in a matter a seconds.

If you too are feeling a bit melted by the weather or even if you’re just curious about green smoothies, give this recipe a whirl.

Tell me about the kinds of foods you like to make when hot weather strikes. Are any of you also frozen banana hoarders?

Enjoy!

Apple Banana Lemon Green Smoothie

There’s nothing not to love about this pale emerald green colored smoothie. It satisfies, looks pretty, provides a cooling refreshment from hot weather, blends up quickly and makes you feel full. All that and you’re also getting 2 servings of fruit and 1 serving of leafy green vegetable! Note: Both apples and spinach are on the Dirty Dozen list, meaning they have the highest levels of pesticides. Try to find organic apples and spinach for this recipe, if possible.

Serves 1

ingredients

1 frozen banana, peeled

1 apple, cored and peeled (if not organic)

1 generous handful of spinach (try to use organic — spinach is on the dirty dozen list!)

1/3 cup milk (any type you like — cow’s, almond, cashew, coconut, soy)

2 teaspoons honey

1 tablespoon whole raw almonds (optional, adds a nice texture)

1 tablespoon lemon juice

1/4 cup ice cubes (optional, for added cooling factor)

Instructions

Blend all ingredients on high until smooth. Serve immediately.
